Pecan Banana Cupcake Recipe
This recipe makes 12
70g chestnut puree
3 ripe bananas sliced
2tsp vanilla extract
50g ground almond
12tsp creme fraiche
Optional – 1 scoop of vanilla why protein powder
How to make
Preheat the oven to 190, fan 170/gas mark 5 and line a 12 hole cupcake tin with paper cases
Place all the ingredients except the creme fraiche in a food processor and blend until smooth and runny
Divide the batter evenly between the cupcake cases & bake for around 18 minutes or until risen and golden on top
Leave to cool then decorate with a tsp of creme fraiche on top,and additional pecans if you wish.
